Instant Pot Cheesy Meatballs and Rotini Noodles

Ingredients

  • 40 frozen meatballs, italian style
  • 16oz rotini noodles
  • 2c water
  • 28oz jar of marinara sauce
  • 1/4c parmesan cheese
  • 1c mozzarella cheese
  • Optional: a teaspoon of red pepper flake
  • Optional: garnish with fresh herbs!

Steps

  1. Add frozen meatballs to the instant pot. 
  2. Add noodles
  3. Level out noodles above meatballs
  4. Add water
  5. Cover with marinara sauce
  6. DO NOT MIX. You need to leave the layers intact for cooking
  7. Place the lid on the instant pot. Lock it into place. Make sure the valve is set to sealing
  8. Cook on manual for 5 minutes
  9. Allow to naturally release pressure for 8-10 minutes
  10. Move the valve to the venting position.
  11. Remove lid
  12. Stir in cheeses and optional pepper flake
  13. Garnish with fresh herbs!

Special Tools

Instant Pot or other countertop pressure cooker.

Notes

The frozen meatballs take time to warm up. The cooking time is listed at 5 minutes, it will take about 15 minutes for the Instant Pot to build enough pressure to cook properly.
