I don't hate on microwave burritos, but sometimes I like tasting my food. Crazy, right?

Ingredients
- Cooking oil
- Salt and Pepper
- Half a red onion, diced
- 1lb ground beef
- Bell pepper, diced
- 2 cloves Garlic or 2tsp jar garlic
- 3/4c water
- 3 tablespoons Taco seasoning (or one packet)
- 2 tablespoons Ranch dressing mix (or one packet)
- Tortillas: six 12", ten 10" or a dozen 8"
- Shredded cheese
- One recipe of Dressed-Up Refried Beans
- Lettuce or Mexican slaw
- Salsa
Steps
- Heat oil in a 10-12" skillet over medium high heat.
- Add onion to hot oil. Salt and pepper to taste. Cook for approximately one minute.
- Add ground beef. Salt and pepper to taste. Cook for approximately 3 minutes and then begin breaking it up.
- When beef is broken up into small chunks, add diced bell pepper. cook until beef is browned and bell pepper is softened, approximately 3 minutes
- Add garlic until fragrant, approximately 30 seconds
- Add taco seasoning and ranch dressing mix to beef
- Add water and mix thoroughly to distribute herbs and spices
- Bring to a boil, reduce heat and simmer for 4-6 minutes, or until the resulting sauce is to your liking.
- Warm tortillas through your preferred method. They should be pliable and not crispy.
- Layer ingredients in tortilla: cheese, beans, beef mix, lettuce, and salsa.
- Roll up burritos by folding in the sides first. Then use your thumbs to lift the edge near you while your fingers hold the rest of the burrito in shape. Tuck this edge into the edge away from you.
Notes
I enjoy a southwest salad mix from the grocery store in place of the lettuce or Mexican slaw.
